Limeflowers, from the British Lime tree, are ripe and ready for picking just now in Scotland. Pick the flowers along with it’s attached leaf and spread out thinly on a sheet or screen to dry. Crumble or cut into smaller bits once dried. The smell is fantastic. This makes a delicious tea which is calming, especially to the heart. But be careful to mind the bees as they just love limeflowers.
